WINERY

Bodegas Thesaurus is located in Olivares del Duero, Valladolid. After an extension of the winery during 2016, it has the most modern vinification systems at the service of the handcrafted techniques inherited from the previous generations of the family.

The winery is distributed in some rooms that harbor the different systems that are necessary in each stage. A room with the stainless steel vats, a laboratory to make the analysis of the different samples, an underground built wine cellar with capacity for 600 barrels, and, for the last, a space for the bottles to rest. Furthermore, there is a tasting room where the guests could enjoy their excellent wines.

The modernity of their installations together with some of the elements kept during the years, such as the lamps and the big windows, makes the winery into an unique place to visit and to feel close to Ribera del Duero’s treasure.

PRODUCTION

The first step in the production of the wine is the harvest, in the case of Bodegas Thesaurus, it is made into boxes and/or in a mechanic way. After that, the grapes are pour out over a last generation vibratory platform and are drive throw the selection table, generating an exclusive treatment of each grape.

As continuation, it comes the controlled fermentation process, between 26º and 28ºC, with diary pumped of the grape-juice during 10-15 days. The yeasts used in the process are indigenous of the area.

Then it comes the decanting of the wine into barrels. In our winery, we use barrels from Bordeaux of 225 l from the most prestigious cooperages. The cooperages as well as the toasted amount have been selected during the years and the different practices. Is has been achieved to find the perfect toasted amount for the correct docking of wood and wine, that gives rise to great balanced and elegant wines.

There are used different kinds of barrels:

  • American oak
  • French oak
  • Mixed oak (American oak hogshead staves and French oak covers)
  • Central-Europe oak (Hungarian)

Bodegas Thesaurus produces Robles with 4 to 6 months in American and French oak barrels; Crianzas with 12 months in American, French and mixed oak barrels; and Selección de la Familia with 18 months in American, French and Central-Europe barrels.

The process always ends with a rest in bottle period, giving time to the wines to balance, dock and round. In the case of the Roble, its time in the bottle is, at least, 2 months; while the Crianza spends 6 months and the Selección de la Familia spends 12 months. This achieves the goal of putting the wines into the market in the exact consumption moment.

During the process, a technique direction, formed by two oenologists together with Gregorio Martín, is in charge of review and guard the wines evolution, getting the optimum maturation point to get their characteristic shades.
